I’ve been trying this new thing where I share a pic of upcoming recipes, a little ahead of publishing them here. A cheeky teaser if you will! And I’m not sure I’ve ever had as many Instagram messages as I did in response to this sausage, leek and potato pie with a cauliflower cheese top. The power of cauliflower cheese, people!
So to be clear, there’s no pastry in this ‘pie’ recipe, which is only a good thing. Of course, pastry is delicious. But it’s also a bit of a faff and when there are a couple of different components to contend with in a dish, I like to take out what I can and minimise stress and washing up. This omission makes my sausage, leek and potato pie with a cauliflower cheese top pretty straightforward. And I think gluten-free if you’re mindful of your sausage selection. And, of course, very delicious and comforting and ooh you’re gonna wanna try it!!
You CAN make this all in one go on the night but I’d recommend making it in the daytime so each of the two layers (the sausage & leek filling and the cauli cheese top) can cool properly before assembly. This will mean a more even cook (because everything is starting at the same temp) and less blurring of sauces and textures, and we do like a nice clean cross-section don’t we…
