One-pan chicken, leek & pea pie with cheat's pastry
A pie you can make tonight! Or any night, with minimal fuss...
I think we can all agree it’s pie season now. And we can probably all also agree that making pastry is a waste of life. Even the very best chefs use shop-bought pastry! Myself included. Hehehe. So, comprising of a filling you can make in just one pan and a ready-made puff pastry lid, this chicken, leek and pea pie is certifiably simple. And no less satisfying, comforting or delicious than if you’d slaved over the stove and punched dough for several hours. I do think fresh herbs make a noticeable difference in a pie filling but I have a surplus of fresh herbs growing on my patio so that’s easy for me to say. If I didn’t, I wouldn’t be paying for herbs in needless packaging, I’d use the dried stuff. Basically, as ever, whatever makes cooking delicious dinners for you and yours more appealing and less stressful, do that!
