Nutella cheesecake
A really easy cheesecake you can whip up tonight or for that dinner party you're stressing about
Many of my favourite recipes are barely recipes, more suggestions for something to make with ingredients you’re likely to have, like this nutella cheesecake. It’s a crowd-pleaser and pretty much fool-proof. You can bodge the quanties if needs be but my recipe handily calls for the exact amount digestives, Nutella, cream cheese and sour cream tend to come in. What more is there to say? If you like chocolate, cream and biscuits, you’ll like this!
Serves 10
266g chocolate digestives
80g softened butter
350g Nutella
280g cream cheese
200g sour cream
4 tbsp icing sugar
Chopped hazlenuts to serve
First, bash up those biccies! You can do this by putting the whole digestives into a freezer bag and enjoying some rage relief with a rolling pin, or chuck them into a processor. Then stir in the butter to bring the mixture together.
Tip your biscuit base into a large springform tin and use your fingers to press it down and out, so it covers the whole base nice and evenly. Then, pop in the fridge for at least 20 minutes, more if you’ve got time.
Next, put the Nutella, cream cheese, sour cream and icing sugar into a large bowl and beat together until smooth and creamy and completely combined. Then pour this onto your chilled biscuit base and spread it out so it’s, again, nice and even. Pop back in the fridge for 4-6 hours. If you’re desperate, you can eat it sooner, but it’s optimum when properly chilled.
Serve straight from the fridge and scatter the chopped hazelnuts onto each piece as you serve (if you put them on the whole thing and don’t eat it all, they go chewy in the fridge). I also like a dollop of sour cream or creme fraiche on the side because I’m an animal.
LEFTOVER IDEA!
You’ve got an empty jar of Nutella - why not use it to make overnight oats? Simply add equal measures of rolled oats and milk (I like oat milk but it’s up to you), secure the lid and give it a good shake before leaving in the fridge overnight. In the morning, enjoy your Nutella-infused oaty breakfast straight from the jar as is or topped with fresh fruit - bananas and raspberries are my go-to.
