I kind of don’t want to publish this. It’s probably my most ‘famous’ dish and the most requested recipe. Up until now, I’ve refused to give it up. In large part because I’ve never written down the quantities and sort of wing it each time. That does mean it comes out a little different each time but I’m here to tell you that’s okay. With most recipes, well most of mine anyway, there’s room for flair. Swapping and ditching the stuff you have or like better is fully encouraged. But, I’m aware that those less confident in the kitchen or anyone who reads Substacks like TWP SO they don’t have to think about what to buy/make next and can simply follow instructions, do enjoy a set ingredient list and precise directions.
Another reason I kind of don’t want to publish this (really really tasty!) baked artichoke recipe is because it’s fun to have a secret recipe. I first sampled a similar baked artichoke dip as a kid, at my auntie and uncle’s house, and it was their attempt to recreate a delicious, closely-guarded secret of an artichoke dip, made by their friend, who refused to give up the deets. From the jovial but very real refusal to share something not particularly important but annoyingly moreish, to the reincarnations it inspired, I very much enjoyed the concept, the whole charade. And it has given me no end of joy to be on the receiving end of bribes for the full ingredients list, the guesses - can I detect a hint of paprika? Is it spinach!? - and the inventive copies. But the time has come. I’m sharing my baked artichoke dip recipe here and now with my favourite internet friends. I’ve been thinking a lot about the ways I can add more value to paid subscriptions, thank you and reward you, and since a good chunk of the financially contributing crew are gals and guys who’ve salivated and ruminated over said baked artichoke dip, revealing it’s make-up was a fine place to start. And if you’re new here or a free subscriber: yes a small baked ramekin of what is essentially four cheeses and some canned artichokes (but OH SO MUCH MORE THAN THAT!) is absolutely worth sticking around and entering into a £4 a month agreement ;)
